Do you want more pork, and more options when it comes to how your hog is cut & packaged?
Ordering a whole or half hog provides a truly custom experience and allows you to communicate directly with our butcher to determine which cuts you would like out of your hog, smoking and curing options, sausage blends, roast size, and more. The cost is $3.75 per pound HANGING weight paid to us, Gillispie's County Line Farm, and processing fees are paid separately, and directly to our meat processor, T&E Meats. This is not your best option if all you want is ground pork or sausage, but if you enjoy the more expensive cuts including bacon, tenderloin, ribs, and chops, this is definitely the way to go.
*A 3.5% processing fee will be added for all bulk purchases & reservations paid via credit card or PayPal. Please contact us to make other payment arrangements (Venmo, check, cash, etc.)
This option results in approximately 75 pounds of pork in your freezer and costs between $500-$600 total depending on the size of the pig and how you decide to have it cut & packaged.

Due to the demand processors are currently facing, scheduling butcher appointments are made months in advance in order to secure a spot. This means we have very little control when it comes to ensuring a hog to be any particular size. We do our best, but it's not an exact science. You may end up with a pig slightly larger, or slightly smaller than the figures shown on this page. If you have any concerns or would like to request a hog on the larger or the smaller side, we will do what we can to accommodate you.
